  • 1 teaspoon salt
  • 2 cups shredded zucchini
  • 6 tablespoons unsweetened cocoa powder (for frosting)
  • 1/4 cup butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/4 cup milk (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine vegetable oil (and applesauce if using), sugar, and vanilla until well mixed.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt; then add this mixture to the wet ingredients.
  4. Squeeze excess moisture from the shredded zucchini using paper towels before adding it to the batter. Mix well until combined.
  5. Spread the brownie batter evenly into the prepared baking pan.
  6. Bake for about 25 to 30 minutes, until brownies spring back when touched.
  7. While baking, melt cocoa powder and butter in a saucepan over low heat and let cool.
  8. In a medium bowl, mix powdered sugar, milk, and vanilla; then stir in cooled cocoa mixture until smooth.
  9. Once brownies have cooled completely, frost and slice into squares.
