  • 1 kg beef (chuck or stewing beef), cut into chunks
  • 3 red bell peppers, deseeded
  • 3 scotch bonnet peppers (adjust to taste)
  • 1 medium onion
  • 400 g canned tomatoes
  • 1 cup vegetable oil
  • 3 tsp chicken bouillon powder
  • 1 tsp salt
  • 1/2 tsp curry powder (optional)
  • 1 tsp oregano (optional)
  • 1/2 tsp thyme (optional)

Instructions

  1. In a pot, season beef with salt and chicken bouillon powder. Add chopped onions and enough water to cover the meat. Boil until beef is tender.
  2. Reserve one cup of broth and set aside cooked beef.
  3. Blend red bell peppers, scotch bonnet peppers, canned tomatoes, and remaining chopped onion until smooth.
  4. Heat vegetable oil in a large pot over medium-high heat. Fry blended mixture for 15–20 minutes until thickened.
  5. Stir in cooked beef and reserved broth. Optionally add spices if desired. Simmer uncovered for another 15–20 minutes.
  6. Adjust seasoning to taste and serve hot over rice, yams, or fried plantains.
