  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon milk
  • Whipped cream for topping

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water and lemon juice to form dough. Chill for at least 30 minutes.
  2. Boil sweet potatoes until tender, then mash until smooth.
  3. Beat softened butter and dark brown sugar until creamy. Add mashed sweet potatoes and eggs one at a time, mixing well after each addition. Stir in spices, salt, evaporated milk, and vanilla.
  4. Preheat oven to 350°F (175°C). Roll out the chilled dough and fit it into your pie dish. Pour in the filling.
  5. Bake for about 90 minutes or until set. Allow to cool before slicing.
