  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce (low sodium if preferred)
  • 1/3 cup sugar
  • 2 tbsp pineapple juice (from canned pineapple or fresh)
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1/2 medium onion, sliced (optional)

Instructions

  1. Coat chicken pieces in cornstarch mixed with salt and pepper.
  2. Heat vegetable oil in a skillet or wok; cook chicken until golden brown (5-7 minutes). Remove from skillet.
  3. In the same skillet, combine ketchup, rice vinegar, soy sauce, sugar, and pineapple juice; simmer until sugar dissolves.
  4. Add cooked chicken back along with pineapple chunks and diced peppers; stir gently and cook for an additional 5-7 minutes.
  5. Thicken the sauce by adding cornstarch mixed with water; stir until desired thickness is achieved.
