  • ½ cup water
  • ¾ cup granulated sugar (divided)
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 2 teaspoons vanilla extract
  • 260 g ladyfingers
  • Freeze-dried strawberries (for dusting)
  • Fresh strawberries (for garnish)

Instructions

  1. Prepare the strawberry syrup by simmering strawberries and water, mashing them to extract juice. Strain, then add sugar and lemon juice, simmering until thickened.
  2. Make the mascarpone filling by whisking together mascarpone, sugar, and vanilla until smooth. In another bowl, whip cream until stiff peaks form, then fold it into the mascarpone mixture along with the cooled strawberry syrup.
  3. Assemble by dipping ladyfingers in remaining syrup and layering them with the mascarpone filling in a serving dish. Refrigerate for at least 6 hours or overnight.
  4. Before serving, dust with freeze-dried strawberry powder and top with sliced fresh strawberries.
