  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Prepare the strawberry sauce: In a saucepan, cook strawberries, sugar, and lemon juice until soft. Mash into a puree, thicken with cornstarch slurry, then cool.
  2. Preheat the oven to 325°F (160°C).
  3. Make the crust: Combine graham cracker crumbs, sugar, and melted butter; press into a springform pan. Bake for 8–10 minutes and let cool.
  4. Prepare cheesecake filling: Beat cream cheese and sugar until smooth; add eggs one by one. Mix in vanilla extract, sour cream, and heavy cream until just combined.
  5. Assemble: Pour cheesecake filling over crust; swirl in cooled strawberry sauce using a knife.
  6. Bake in a water bath for about 55–65 minutes until edges are set.
  7. Cool gradually in the oven; refrigerate for at least 6 hours before serving.
