  • 16 ounces softened cream cheese
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 1 cup cold whipping cream
  • 3 tablespoons plant-based gelling agent (vegan gelatin)

Instructions

  1. In a mixing bowl, combine melted butter, graham cracker crumbs, sugar, and almond extract. Press into the bottom of a 9×9-inch baking dish.
  2. Beat softened cream cheese until smooth; mix in powdered sugar, vanilla extract, and lemon juice until creamy. Fold in chilled whipping cream gently.
  3. Spread half the filling over the crust; layer with sliced strawberries. Top with remaining filling.
  4. Prepare the vegan gelatin according to package instructions; once slightly cooled, pour over the layers.
  5. Chill for at least 2 hours before serving and top with Cool Whip.
