  • ¾ cup unsweetened cocoa powder

  • 1 ½ tsp baking soda

  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 8 oz semi-sweet chocolate (chopped, for ganache)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt; mix well.
  3. Add eggs, milk, vegetable oil, and vanilla extract; beat on medium speed until smooth.
  4. Carefully stir in boiling water until well combined.
  5. Grease two 9-inch round cake pans.
  6. Pour batter evenly into the prepared pans.
  7. Bake for about 30 minutes or until a toothpick inserted comes out clean.
  8. Allow cakes to cool in pans for 10 minutes before transferring them to a cooling rack.
  9. In a saucepan over medium heat, combine chopped strawberries and sugar; cook until strawberries soften (about 5 minutes).
  10. Stir in lemon juice and cornstarch mixture; cook until thickened.
  11. Remove from heat and let cool completely.
  12. Place chopped chocolate in a bowl.
  13. Heat heavy cream in a saucepan until just boiling; pour over chocolate.
  14. Let sit for a few minutes before stirring until smooth.
  15. Place one cake layer on a serving plate; spread half of the strawberry filling on top.
  16. Add the second cake layer; cover with remaining strawberry filling.
  17. Drizzle ganache over the top of the cake allowing it to drip down the sides.
