  • 1 ½ lbs lean ground beef
  • 1 box stove top stuffing mix (any flavor)
  • 1 cup finely diced onion
  • 2 large eggs
  • ⅓ cup milk
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with aluminum foil and lightly spray with non-stick cooking spray.
  2. In a large mixing bowl, combine ground beef, stuffing mix, diced onion, eggs, and milk. Mix until just combined.
  3. Spray a loaf pan with non-stick spray, pack the meat mixture into the pan, then flip onto the prepared baking sheet.
  4. Bake uncovered for about 40 minutes.
  5. While baking, mix together ketchup and vinegar for the glaze.
  6. After 40 minutes, remove from oven and spread glaze over the meatloaf, then bake for an additional 10-30 minutes until internal temperature reaches 160°F.
  7. Let rest for at least 10 minutes before slicing.
