  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 tablespoon parsley flakes
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces sliced provolone cheese
  • 2.25 ounces sliced black olives
  • 16 ounces dried spaghetti
  • 16 ounces marinara sauce

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with foil.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, olive oil, parsley, garlic powder, onion powder, salt, and pepper; mix well.
  3. Roll the mixture into 2-inch meatballs and place on the baking sheet.
  4. Bake for 18-20 minutes until golden brown.
  5. Cut provolone cheese into circles; place on top of each meatball with an olive slice as the pupil.
  6. Return to the oven for another 2-3 minutes until cheese melts.
  7. Meanwhile, cook spaghetti according to package instructions and warm marinara sauce in a pot.
  8. Combine spaghetti with marinara and serve with eyeball meatballs on top.
