  • 1 1/2 cups dark chocolate chips
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs (room temperature)
  • 1 tsp espresso powder (optional)
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 package candy eyes
  • 20 oz semi-sweet chocolate chips for coating
  • 1 tbsp coconut oil
  • 1 cup powdered sugar
  • 23 tbsp heavy cream, to thin

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9 inch cake pan with parchment paper.
  2. In a microwave-safe bowl, melt together butter and dark chocolate chips until smooth.
  3. Whisk in sugar until fully dissolved, then add eggs one at a time, mixing until combined.
  4. Fold in flour gently until just mixed; pour batter into the prepared pan.
  5. Bake for 25–30 minutes or until a toothpick comes out with a few moist crumbs.
  6. Cool before cutting and chilling in the freezer to firm up.
  7. Coat brownies in melted semi-sweet chocolate and decorate with icing and candy eyes.
