- 2 pounds boneless skinless chicken breasts
- 1 red bell pepper (finely chopped)
- ½ medium yellow onion (finely chopped)
- 2 (13.5-ounce) cans quartered artichoke hearts (drained and excess liquid gently squeezed out)
- 2 cups (lightly packed) baby spinach (roughly chopped)
- ½ cup mayonnaise
- 4 garlic cloves (minced)
- 1 lemon (zested and juiced (about 1 tablespoon zest and 3 tablespoons juice))
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- Preheat the oven to 400°F (200°C). Cut the chicken into 1-inch pieces.
- In a large mixing bowl, combine chicken with chopped bell pepper, onion, drained artichokes, spinach, and optional parmesan cheese.
- In a small bowl, mix mayonnaise, minced garlic, lemon zest and juice, oregano, thyme, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and stir until well-coated.
- Transfer to a greased baking pan and bake uncovered for 25-30 minutes until chicken is cooked through.
