  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups whole milk or heavy cream
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 45 jalapeños, chopped (seeds removed for mild heat)
  • ½ cup cooked, diced chicken
  • Salt and pepper to taste
  • 4 slices of bread (your choice of white, whole wheat, or sourdough)
  • 4 tablespoons butter, softened
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Melt butter in a large pot over medium heat. Add the diced onion and minced garlic; sauté until soft.
  2. Pour in chicken broth and milk, stirring well. Bring to a simmer and cook for about 5–7 minutes.
  3. Gradually stir in shredded cheddar and Monterey Jack cheeses until melted and creamy.
  4. Mix in chopped jalapeños and cooked chicken. Season with salt and pepper to taste.
  5. For the dippers, butter one side of each slice of bread and grill with shredded cheese until golden brown. Cut into strips.
  6. Serve the soup hot with grilled cheese dippers on the side.
