  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 Tbsp corn starch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. In a stand mixer bowl, combine lukewarm milk, granulated sugar, and yeast. Let it sit until bubbly (about 5-10 minutes).
  2. Add eggs and kosher salt to the yeast mixture.
  3. Gradually add flour while mixing on low speed until incorporated.
  4. Add softened butter and mix until dough forms.
  5. Knead on medium speed for about 5-7 minutes until smooth.
  6. Place dough in a greased bowl, cover with plastic wrap or a damp cloth.
  7. Allow it to rise in a warm place until doubled in size (about 1 hour).
  8. In a skillet over medium heat, melt butter for the apple filling.
  9. Add diced apples, granulated sugar, ground cinnamon, kosher salt, corn starch, and cook until apples are soft (about 5-7 minutes). Set aside.
  10. Preheat oven to 350°F (175°C).
  11. Roll out dough on a floured surface into a rectangle.
  12. Spread softened butter over rolled-out dough.
  13. Mix brown sugar, cinnamon, and kosher salt; sprinkle evenly over buttered dough.
  14. Spread cooled apple filling over cinnamon-sugar layer.
  15. Sprinkle pecans on top before rolling tightly from one end.
  16. Cut rolled dough into 12 equal pieces; place in greased baking dish.
  17. Cover with plastic wrap; let rise again for about 30 minutes.
  18. Bake for 25-30 minutes until golden brown.
  19. Beat softened butter and cream cheese together until smooth.
  20. Gradually add powdered sugar while mixing; add heavy cream to reach desired consistency.
  21. Drizzle frosting over warm rolls before serving.
