- 1 tablespoon olive oil
- 3 tablespoons butter (divided)
- 2 small zucchini (cut into thin, half moon slices)
- Salt and black pepper (to taste)
- 1 small yellow onion (finely diced)
- 1 pound small button mushrooms (cleaned and patted dry)
- 3 to 4 cloves garlic (minced)
- 2 teaspoons fresh chopped herbs (or 1 teaspoon dried thyme or oregano)
- ¼ cup vegetable broth
- Chopped fresh parsley (for garnish)
- Heat 1 tablespoon of olive oil and ½ tablespoon of butter in a large skillet over medium-high heat.
- Add zucchini slices, season with salt and pepper, and cook for 3 to 4 minutes until fork-tender. Remove and set aside.
- In the same skillet, melt the remaining butter; add diced onions and sauté for about 2 minutes until softened.
- Stir in mushrooms and sauté for 5 to 7 minutes until browned and tender.
- Add minced garlic and herbs; cook for another 20 seconds until fragrant.
- Return the cooked zucchini to the skillet, mix with mushrooms, and heat through for about a minute.
- Pour in vegetable broth and simmer for an additional 2 minutes. Adjust seasoning if necessary before serving.
- Garnish with chopped parsley before enjoying.
