  • 2 large eggplants
  • 1 lb ground beef (or ground lamb)
  • 2 cups crushed canned tomatoes
  • 3 cloves garlic (minced)
  • 1 white onion (diced)
  • 2 tbsp olive oil
  • 2 tbsp Greek yogurt
  • Fresh mint (for garnish)
  • 2 tbsp fresh dill (minced)
  • 1 lemon (juiced)
  • 1 tbsp sumac
  • 1 tbsp Aleppo pepper
  • 2 tsp ground coriander
  • 1 bay leaf
  • 1 tbsp salt (divided)
  • 1 tsp black pepper (divided)

Instructions

  1. Preheat your oven to 400°F. Cut eggplant into 2-inch thick pieces.
  2. Roast eggplant on a baking sheet drizzled with olive oil and seasoned with salt and pepper for about 30 minutes until tender.
  3. In a large pan, sauté diced onion and minced garlic in olive oil until browned. Add spices and cook briefly.
  4. Push onions aside, add ground beef, cooking until browned; then stir in crushed tomatoes and roasted eggplant.
  5. Simmer the mixture on low heat for 20 minutes.
  6. Meanwhile, prepare the yogurt sauce by mixing Greek yogurt, minced garlic, dill, and lemon juice in a bowl.
  7. Serve hot with a dollop of yogurt sauce and garnish with fresh mint.
