  • 1 cup diced celery
  • 1 (15-ounce) can of tomato sauce with no added sugar
  • 1 (15-ounce) can of diced fire-roasted tomatoes
  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 (15-ounce) can of kidney beans, rinsed and drained
  • 1 (15-ounce) can of pinto beans, rinsed and drained
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon mild chili seasoning
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons optional hot sauce

Instructions

  1. Prepare all vegetables by washing and chopping them into bite-sized pieces.
  2. Place the chopped vegetables in the slow cooker along with the tomato sauce and diced tomatoes.
  3. Add the rinsed beans and season with salt, garlic powder, cumin, chili seasoning, and smoked paprika. Stir until combined.
  4. Cover and cook on low heat for 4 hours or high heat for 2 hours.
  5. Stir in fresh lime juice just before serving.
