  • 1 tablespoon olive oil
  • 12 oz chicken or turkey sausage (cooked)
  • 1 large red bell pepper (diced)
  • 1 large zucchini (sliced)
  • 1/2 teaspoon chili powder
  • Fresh cilantro (chopped)

Instructions

  1. Wash and chop all vegetables: dice the bell pepper, slice the zucchini, and chop fresh cilantro.
  2. Heat olive oil in a skillet over medium heat. Add the cooked sausage and sauté for about 3–4 minutes until heated through.
  3. Stir in the bell pepper, zucchini, and corn; cook for an additional 5–7 minutes until veggies are tender.
  4. Add chili powder, mix well to combine flavors.
  5. Remove from heat and garnish with freshly chopped cilantro before serving.
