  • 12 large baking potatoes (washed and cubed)
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 7 oz (200 g) block of feta cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed potatoes with 1 tablespoon of olive oil, salt, and black pepper until evenly coated. Spread the potatoes in a single layer on a baking sheet.
  3. Place the block of feta in the center of the baking sheet and surround it with the head of garlic. Drizzle everything with the remaining tablespoon of olive oil and sprinkle thyme and oregano on top.
  4. Roast in the preheated oven for about 40 minutes or until the potatoes are golden brown, stirring halfway through for even cooking.
  5. Once done, remove from the oven and squeeze fresh lemon juice over everything while hot. Drizzle honey on top for added sweetness.
  6. Garnish with chopped fresh basil before serving.
