  • 960 ml chicken broth
  • 240 ml heavy cream
  • 225 g large shrimp, peeled and deveined
  • 2 red snapper fillets (about 170 g each)
  • 15 ml olive oil
  • 30 g unsalted butter
  • 2 tablespoons Cajun seasoning
  • 4 garlic cloves, minced
  • 60 g shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • 50 g grated Parmesan cheese

Instructions

  1. 1. Cook the grits: Boil chicken broth in a saucepan, whisk in grits, reduce heat to low, and cook uncovered for 20-25 minutes until thickened. Stir in cream, butter, cheddar cheese, salt, and pepper.
  2. 2. Prepare the shrimp: Toss shrimp with Cajun seasoning. Sauté in olive oil and butter with garlic until cooked through. Remove from skillet.
  3. 3. Cook the red snapper: Sear seasoned fillets in the same skillet until golden brown on both sides.
  4. 4. Make the sauce: Sauté garlic, add Cajun seasoning and chicken broth; simmer before stirring in heavy cream and cheese until smooth.
