  • 2 zucchini, chopped
  • 2 yellow squash, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Chop the onion, garlic, bell peppers, eggplant, zucchini, and yellow squash into small pieces.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté the onion until softened (5-7 minutes), then add garlic and cook until fragrant (1 minute).
  3. Stir in the bell peppers and cook until soft (about 5 minutes). Add eggplant, zucchini, and yellow squash; sauté until tender (8-10 minutes).
  4. Pour in crushed tomatoes, tomato sauce, and vegetable broth. Add dried herbs and season with salt and pepper.
  5. Bring to a simmer on low heat for at least 30 minutes to allow flavors to meld.
  6. If desired, blend some of the soup for a smooth texture using an immersion blender.
