  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together 1 cup + 3 tablespoons all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 3/4 cup granulated sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon cloves.
  3. In another bowl, combine 1/2 cup pumpkin puree, 1/4 cup milk, 1/4 cup melted butter (or vegetable oil), and 1 1/2 teaspoons vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Transfer the batter to an 8-inch casserole dish.
  6. In a separate bowl, mix together 1/2 cup granulated sugar, 1/2 cup brown sugar, and 1/4 cup chopped pecans; sprinkle evenly over the batter.
  7. Carefully pour 1 1/2 cups very hot water over the entire dish without stirring.
  8. Bake for about 40 minutes or until the center is set.
  9. Allow cooling for about 5-10 minutes before serving.
