  • 1/3 cup white sugar
  • 1/2 cup light brown sugar
  • 1/2 cup butter
  • 1/2 cup flour for streusel topping
  • 1 tsp cinnamon for streusel topping
  • 1/4 tsp ground ginger for streusel topping
  • 1/4 tsp ground cloves for streusel topping
  • 1/4 tsp ground nutmeg for streusel topping
  • 1/2 tsp baking powder for streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine vegetable oil and sugar; beat in eggs, then stir in pumpkin puree and vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ginger; gradually add dry ingredients to the wet mixture.
  4. For the cream cheese filling, beat together softened cream cheese, sugar, and vanilla until smooth.
  5. Prepare the streusel topping by mixing brown sugar, white sugar, butter, flour, spices, and baking powder until crumbly.
  6. In a greased 9×13 inch pan, layer half of the pumpkin batter, spread cream cheese filling on top, cover with remaining batter, and sprinkle with streusel.
  7. Bake for about 45 minutes or until a toothpick comes out clean from the center.
