  • 1 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs (room temperature)
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf or round cake pan.
  2. In one bowl, mix flour, spices, salt, baking powder, and baking soda. Set aside.
  3. In another bowl, cream softened butter and sugar until fluffy using a hand mixer.
  4. Add eggs to the creamed mixture and mix well.
  5. Stir in pumpkin puree and vanilla extract until smooth.
  6. Gradually add dry ingredients to the wet mixture and mix gently until combined.
  7. Pour in warm milk and stir until you have a smooth batter.
  8. Transfer the batter into the prepared pan and bake for approximately 50-55 minutes (check with a toothpick).
  9. Allow cooling for about 15 minutes before removing from the pan.
