  • 2 cups rolled oats
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup pumpkin puree
  • 1 ¼ cup milk of choice (almond milk recommended)
  • 2 large eggs (or flax eggs)
  • 2 teaspoons vanilla
  • ⅓ cup maple syrup or honey
  • Optional toppings: chocolate chips, nuts, raisins, or topping of choice

Instructions

  1. Preheat the oven to 375°F and grease an 8×8 baking dish with olive oil.
  2. In a medium bowl, mix together the rolled oats, pumpkin spice, baking powder, and salt.
  3. In another bowl, combine the pumpkin puree, milk, eggs (or flax eggs), vanilla extract, and maple syrup until well blended.
  4. Stir the wet mixture into the dry ingredients until thoroughly combined.
