  • ½ cup low sodium soy sauce
  • ½ cup pineapple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • pounds boneless skinless chicken breasts or thighs
  • 1 small red onion
  • 1 red bell pepper
  • 4 cups broccoli florets
  • 20 ounces canned pineapple chunks

Instructions

  1. In a medium bowl, whisk together the soy sauce, pineapple juice, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch until smooth.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the chicken and season with salt and pepper. Cook until browned and cooked through (7–10 minutes). Transfer to a plate.
  3. In the same skillet, add remaining oil and stir-fry the chopped onion, bell pepper, and broccoli for about 4 minutes until tender-crisp.
  4. Return chicken to the skillet along with pineapple chunks. Pour the prepared sauce over everything and cook for an additional 1–2 minutes until thickened.
  5. Serve over cooked rice or enjoy in lettuce wraps.
