  • 1 medium pineapple (with 1 cup of chunks reserved)
  • 1 ½ lbs boneless skinless chicken breasts (cut into bite-sized pieces)
  • ½ tsp Salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
  • 1 cup pineapple chunks (from the pineapple boats)
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 Tbsp brown sugar
  • 1 tsp ginger powder
  • 3 Tbsp rice vinegar (or apple cider vinegar)
  • 2 tsp cornstarch (or arrowroot powder)
  • 3 garlic cloves (minced)
  • 2 cups cooked rice (brown rice or white rice)
  • 1 green onion (chopped)
  • ½ tsp sesame seeds

Instructions

  1. Cut the pineapple in half lengthwise and scoop out the insides to create two pineapple boats. Reserve one cup of chunks.
  2. Heat oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until browned (5-7 minutes).
  3. In a bowl, mix soy sauce, water, brown sugar, rice vinegar, and reserved pineapple chunks. Add to the skillet and cook until the sauce thickens (5-7 minutes).
  4. Spoon rice into each pineapple boat and top with the chicken mixture. Garnish with green onions and sesame seeds before serving.
