  • 1 1/2 pounds chicken (boneless, skinless)
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Canned pineapple chunks for garnish
  • Green onions for topping
  • Sesame seeds for topping

Instructions

  1. Prepare all ingredients by dicing the chicken and vegetables, and measuring out the sauce components.
  2. In a bowl, mix together pineapple juice, chicken broth, honey, hoisin sauce, soy sauce, and cornstarch until smooth.
  3. Heat vegetable oil in a wok or skillet over medium-high heat; add chicken seasoned with salt and pepper. Cook for about 5–7 minutes until golden brown.
  4. Add diced red bell pepper, onion, garlic, and ginger; stir-fry for another 3–4 minutes until vegetables are tender yet crisp.
  5. Incorporate canned pineapple chunks and the prepared sauce; cook until the sauce thickens (about 3–4 minutes).
  6. Serve hot over rice or noodles and garnish with sliced green onions and sesame seeds.
