  • 1 cup cubed pineapple
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 diced red bell pepper
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Sliced green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown. Remove from skillet and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  3. Add cubed pineapple and cook for an additional 2 minutes.
  4. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  5. Return cooked chicken to the skillet and mix well to combine flavors. Heat through before serving.
  6. Garnish with sliced green onions and sesame seeds.
