  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic, minced
  • 1/2 cup Soy Sauce (low sodium)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar
  • 1 tsp Cornstarch
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 Red Bell Pepper, diced
  • 1/4 cup Green Onions, chopped

Instructions

  1. Cut the chicken into bite-sized pieces. Heat oil in a large skillet over medium-high heat and sauté chicken until browned and cooked through (5-7 minutes). Remove and set aside.
  2. In the same skillet, sauté garlic until fragrant (about 30 seconds). Add soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir well.
  3. Mix cornstarch with water in a small bowl, then pour into the skillet while stirring. Let simmer for 2-3 minutes until slightly thickened.
  4. Return chicken to the skillet; add pineapple chunks, bell pepper, and green onions. Cook for another 2-3 minutes until veggies are tender-crisp.
  5. Serve over cooked rice and enjoy!
