  • 2 cups white rice
  • 1 cup fresh pineapple chunks
  • 1 bell pepper, diced
  • 1 cup snap peas
  • 1 onion, diced
  • 2 garlic cloves, minced
  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse rice under cold water until clear. In a medium pot, combine rinsed rice with 4 cups of water; bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until fluffy.
  2. While rice cooks, heat olive oil in a large skillet over medium-high heat. Add onion and garlic; sauté until fragrant.
  3. Add cubed chicken; cook until golden brown (5-7 minutes). Stir in bell pepper and snap peas; cook for another 3-4 minutes.
  4. In a bowl, mix soy sauce, chicken broth, and optional honey. Pour over chicken mixture along with pineapple chunks; stir well.
  5. Cook for an additional 2-3 minutes until everything is heated through and sauce thickens slightly.
  6. Fluff cooked rice with a fork and serve topped with the pineapple chicken mixture.
