  • 1 lb. Red Kidney Beans (soaked overnight) or 1 (15 oz.) can
  • 1 lb. Cannellini Beans (soaked overnight) or 1 (15 oz.) can
  • 1 lb. Ditalini Pasta or any small cut pasta
  • 1 qt. Tomato Juice
  • 1 (15 oz.) can Diced Tomatoes
  • 8 cups Chicken Stock
  • 3 Carrots, sliced
  • 3 stalks Celery, diced
  • 1 Onion, diced
  • 46 cloves Garlic, minced
  • Seasonings: Salt, Pepper, Thyme, Basil, Oregano

Instructions

  1. Heat a heavy pot over medium/high heat.
  2. Prep your vegetables while the pot heats.
  3. Add oil to the pot and sauté onions until soft.
  4. Incorporate carrots and celery; cook until tender.
  5. Mix in garlic and seasonings; cook for another minute.
  6. Pour in tomato juice, diced tomatoes, and chicken stock; bring to a boil.
  7. Add soaked beans; lower heat to simmer for 45–60 minutes until beans are tender.
  8. Stir in pasta; cook for an additional 10–12 minutes until al dente.
  9. Adjust seasoning to taste before serving.
