  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 12 oz semi-sweet chocolate chips
  • 6 tablespoons unsalted butter
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 12 oz dark chocolate chips
  • ¾ cup heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix melted butter, brown sugar, and granulated sugar until blended. Add eggs one at a time and stir in vanilla.
  3. In another bowl, whisk together flour, cocoa powder, salt, and baking soda. Gradually add dry ingredients to the wet mixture until combined. Fold in chocolate chips gently.
  4. Drop dough onto prepared baking sheets about two inches apart and bake for 10-12 minutes until edges are set but centers remain soft.
  5. For the peanut butter filling, beat together unsalted butter and peanut butter until smooth; gradually add powdered sugar and vanilla.
  6. Once cookies are cooled, spread peanut butter filling on top of each cookie.
  7. For the ganache, heat cream until simmering then pour over dark chocolate chips; let sit for a few minutes before stirring until smooth. Drizzle or spread ganache over cookies.
  8. Allow cookies to set before enjoying.
