  • 2 small to medium acorn squash
  • ¼ cup extra-virgin olive oil
  • 1 cup finely grated parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the top and bottom of each acorn squash, then slice them in half lengthwise. Scoop out the seeds.
  3. Cut each half into 1-inch thick slices and place them in a mixing bowl.
  4. Toss the squash slices with olive oil, parmesan cheese, garlic powder, salt, and herbs until well coated.
  5. Arrange the slices on a parchment-lined baking tray and press any leftover seasoning onto the tops.
  6. Bake for 20 to 25 minutes until soft and lightly golden.
