Ingredients

Scale
  • 1 tablespoon active dry yeast
  • 1/4 cup superfine sugar
  • 1 and 1/2 cups chilled whole milk
  • 4 cups all-purpose flour
  • 1/4 cup unsalted butter (softened)
  • 2 tablespoons unsalted butter (for assembly)
  • 1 bar dark chocolate (chopped)
  • 1 large egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. In a mixing bowl, combine yeast and sugar with lukewarm milk. Let it sit until frothy.
  2. Mix in cinnamon, softened butter, flour, and salt until combined. Knead until smooth.
  3. Chill the dough in a greased bowl covered with plastic wrap for at least 6 hours or overnight.
  4. Create a butter block by beating softened butter into a rectangle and refrigerate until firm.
  5. Roll out the chilled dough, wrap around the butter block, seal edges, and roll out to create layers.
  6. Cut triangles from the dough, add chocolate pieces, roll up each croissant, proof on a baking sheet for about 30 minutes.
  7. Preheat oven to 400°F (200°C), brush tops with egg wash, and bake for 15–20 minutes until golden brown.
