  • 2 eggplants, sliced into 1/4-inch rounds
  • 1 lb ground lamb or beef
  • 1 large sweet onion, chopped
  • 3 cloves fresh garlic, minced
  • 1 can (14 oz) canned tomatoes
  • 1 cinnamon stick
  • 1/2 cup grated Parmesan cheese (or a cheese of choice)
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplant and sprinkle with salt; let sit for 30 minutes to draw out moisture. Rinse and pat dry.
  3. Sauté eggplant in olive oil until golden brown on both sides; set aside.
  4. In the same skillet, cook onions until translucent, then add garlic.
  5. Brown ground meat in the skillet; stir in canned tomatoes and cinnamon stick. Simmer for 15-20 minutes.
  6. For the béchamel sauce, melt butter in a saucepan, whisk in flour to form a roux, gradually add milk until thickened; stir in cheese.
  7. Layer half of the eggplant slices in a baking dish followed by half of the meat mixture; repeat layers and top with béchamel sauce.
  8. Cover with foil and bake for 30 minutes; uncover and bake an additional 15-20 minutes until golden brown.
  9. Let rest for 15 minutes before slicing and serving.
