  • 2 cups vegetable broth
  • 1 teaspoon dried thyme

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a medium saucepan, warm the olive oil over medium heat. Sauté the chopped onion for 3-4 minutes until soft and translucent.

  5. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
  6. Remove from heat and fluff with a fork; stir in fresh parsley.
