  • ½ cup unsalted butter (melted)
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • 2 tbsp honey (for glaze)
  • 2 tbsp orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In one bowl, whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted butter, raw honey, and eggs until smooth.
  4. Stir in the fresh orange juice, zest, and grated ginger into the wet mixture.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared pan and bake for 40–45 minutes or until a toothpick comes out clean.
  7. For extra flavor, brush with a honey-orange glaze made from mixing honey and orange juice while warm.
