  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 3 cloves minced garlic
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 can (15 oz) red kidney beans, rinsed and drained
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ditalini pasta (or any small pasta)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion, celery, and carrots to the pot. Sauté for about 5 minutes or until the vegetables begin to soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced tomatoes, cannellini beans, red kidney beans, beef broth, and tomato paste. Stir to combine.
  5. Add the oregano, basil, and Italian seasoning. Season with salt and pepper to taste. Let it simmer for 10 minutes.
  6. Stir in the ditalini pasta and cook until al dente, about 8-10 minutes. Add more broth or water if the soup thickens too much.
  7. Taste the soup and adjust seasonings as needed. Serve hot.
