  • 1 red pepper (roasted)
  • 1/3 cup walnuts (toasted)
  • 1/2 onion
  • 1 garlic clove
  • 1/2 cup red pepper paste
  • 2 tbsp tahini
  • Olive oil
  • Spices (cumin, coriander, Aleppo pepper)

Instructions

  1. Preheat oven to 400°F (200°C). Roast the red pepper slices on a lined baking sheet with olive oil for about 30 minutes until charred.
  2. Allow the peppers to cool slightly. In a food processor, combine roasted peppers, walnuts, onion, garlic, and optional chili.
  3. Blend until combined but textured. Add red pepper paste, breadcrumbs, tahini, pomegranate molasses, olive oil, cumin, coriander, Aleppo pepper, and salt; blend until creamy.
  4. Adjust seasoning if needed. Serve drizzled with olive oil and garnished with pomegranate seeds and mint.
