  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8 ounces fresh mozzarella, cut into small cubes
  • 2 tablespoons chopped fresh rosemary
  • 4 cups water (for boiling)
  • 1/4 cup baking soda

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Knead until smooth and elastic. Cover and let rise for 30-45 minutes until doubled in size.
  3. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Prepare the filling by mixing mozzarella cubes, chopped rosemary, and grated Parmesan cheese in a small bowl.
  5. Divide risen dough into 8 portions. Roll each into ropes, flatten slightly, place filling in the center, fold over, and seal edges to shape pretzels.
  6. In a saucepan, bring water to near boiling; add baking soda. Boil each pretzel for about 30 seconds before placing on the baking sheet.
  7. Sprinkle with grated Parmesan cheese and bake for 15-20 minutes until golden brown.
