  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips

Instructions

  1. Grease a large mixing bowl with butter or cooking spray and pour in the Rice Krispies Cereal.
  2. In a medium-large saucepan over low heat, melt the salted butter. Add the vegan marshmallows and stir until three-quarters melted.
  3. Remove from heat and mix in the peppermint extract and green food coloring until smooth.
  4. Pour the melted mixture over the cereal and gently toss to coat. Let cool for about 5-8 minutes.
  5. Reserve some chocolate chips, then add the rest to the cereal mix and stir well.
  6. Spread evenly into an 8-inch pan and sprinkle reserved chocolate chips on top, pressing down gently.
  7. Allow to cool at room temperature for at least 30 minutes before cutting into squares.
