  • 1 1/4 cups powdered sugar
  • 2 tbsp milk
  • 1/2 tsp culinary lavender (steeped in warm milk, then strained)
  • Purple gel food coloring (optional)
  • Fresh blueberries (for garnishing)
  • Mint leaves (for garnishing)
  • Dried lavender buds (for garnishing)
  • Violet sprinkles (for garnishing)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet pan with parchment paper.
  2. Whisk together flour, baking powder, and salt in one bowl. In another bowl, cream softened butter and sugar until fluffy. Add eggs one by one, followed by vanilla extract.
  3. Gradually mix the dry ingredients with the creamed mixture while alternating with milk until smooth.
  4. Pour the batter into the prepared pan and bake for 20–25 minutes or until a toothpick comes out clean. Allow cooling completely.
  5. For the blueberry filling, combine blueberries, sugar, lemon juice, and cornstarch in a saucepan over medium heat until thickened; let cool.
  6. Cut cooled cake into rounds or hearts and layer with blueberry filling to create mini cake sandwiches.
  7. For the glaze, mix powdered sugar with lavender-infused milk until smooth; drizzle over mini cakes and garnish as desired.
