  • 1 large egg yolk, slightly beaten
  • 28 ounces sweetened condensed milk (two 14-ounce cans)
  • 1 teaspoon light corn syrup
  • 6 ounces dark chocolate (60% cacao), coarsely chopped
  • Sea salt, for finishing

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cream together softened butter and sugar in a mixing bowl until fluffy. Gradually add flour and salt, then mix in the beaten egg yolk to form dough.
  3. Press dough into the baking dish and bake for about 20 minutes until lightly golden.
  4. In a saucepan over medium heat, combine sweetened condensed milk, light corn syrup, and remaining butter; stir continuously until thickened (about 5-7 minutes).
  5. Pour caramel over the baked shortbread and let it cool slightly.
  6. Melt dark chocolate with remaining butter until smooth, then pour over the cooled caramel layer.
  7. Sprinkle sea salt on top while still warm, then let cool completely before cutting into bars.
