2 ripe mangos (peeled & diced)
2–3 habanero peppers (stemmed & seeded)
4 cloves garlic (minced)
½ cup honey (or maple syrup for vegan)
¼ cup apple cider vinegar
2 tbsp soy sauce (or coconut aminos)
½ cup water
1 tbsp olive oil
½ tsp salt
Instructions
In a saucepan over medium heat, warm the olive oil and sauté minced garlic and habaneros for 1–2 minutes until fragrant.
Transfer the sautéed mixture into a blender along with diced mangoes, honey, apple cider vinegar, soy sauce, and water. Blend until smooth.
Return the blended mixture to the saucepan and simmer on medium-low heat for 10–12 minutes until slightly thickened.
Taste and adjust sweetness or tanginess as desired by adding more honey or vinegar.
