Instructions

  1. In a blender, combine milk, eggs, canola oil, flour, salt, and sugar. Blend until smooth. Chill the batter in the refrigerator for 1-2 hours.
  2. Preheat a skillet over medium-high heat and add a bit of oil. Pour a small amount of batter into the pan while swirling to create thin crepes.
  3. Cook until golden brown on one side (about 20 seconds), then flip carefully and cook the other side for another 15 seconds.
  4. In a food processor, mix ricotta cheese, lemon zest, sugar, vanilla extract, and milk until smooth.
