  • 1 1/2 cups (300g) granulated sugar
  • 3 Tbsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 1 large egg
  • 3 cups (360g) all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup (50g) sugar (for rolling cookies)

Instructions

  1. Cream together softened butter and sugar with lemon zest until fluffy.
  2. Mix in fresh lemon juice and egg until fully combined.
  3. Gradually add flour, baking soda, and salt; mix gently until no flour streaks remain.
  4. Cover the dough and chill in the refrigerator for 30-60 minutes.
  5. Preheat oven to 350°F (175°C). Roll dough into balls and coat with sugar.
  6. Place on a baking sheet lined with parchment paper, spacing them apart.
  7. Bake for 11-13 minutes or until edges are lightly golden.
  8. Cool on the baking sheet for five minutes before transferring to a rack.
