  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 4 tbsp butter (melted)
  • 32 oz cream cheese (softened)
  • 1 cup white granulated sugar
  • 3 eggs (room temperature)
  • 1/2 cup heavy whipping cream
  • Zest of 2 lemons
  • 1 tsp vanilla extract

Instructions

  1. Prepare a springform pan by wrapping the outside in aluminum foil to prevent water from leaking in during baking.
  2. For the crust, combine graham cracker crumbs and brown sugar in a bowl. Mix in melted butter and press firmly into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time, mixing well after each addition.
  4. Blend in heavy whipping cream, lemon zest, vanilla extract, and continue until fully combined.
  5. Pour the filling over the crust and bake in a preheated oven at 325°F (160°C) for about 85 minutes or until set but slightly jiggly in the center.
  6. Cool gradually inside the oven with the door ajar for an hour, then refrigerate for at least four hours before serving.
