  • 12 fresh oysters, scrubbed clean
  • 6 tbsp unsalted butter
  • 2 garlic cloves, finely minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • Sea salt (to taste)
  • Freshly ground black pepper (to taste)
  • Lemon wedges (for garnish)

Instructions

  1. Preheat your grill to high heat (about 500°F / 260°C).
  2. In a small saucepan over low heat, melt the butter and add minced garlic, cooking until fragrant.
  3. Stir in lemon juice, zest, parsley, sea salt, and black pepper; remove from heat once combined.
  4. Place cleaned oysters on the grill flat-side up and cook with the lid down for 2–3 minutes until edges start to curl.
  5. Add about 1 teaspoon of lemon butter sauce to each oyster and close the lid again for an additional 1–2 minutes.
  6. Carefully remove using tongs and serve hot with lemon wedges and extra parsley.
