  • 1 tbsp (8.5 g) yeast
  • 2 cups (500 ml) warm milk
  • 4 large eggs
  • 1 tbsp (8.5 g) sugar
  • 1 tbsp (8.5 g) salt
  • 1 1/3 cup (315 ml) oil
  • 8 cups (1 kg) flour + a little more for rolling dough out
  • 2 cups (250 g) feta cheese
  • Salt, to taste
  • Sesame seeds
  • 3 egg yolks, beaten slightly
  • 2 eggs

Instructions

  1. Proof the yeast: Mix warm milk, yeast, and sugar in a mug and let it foam for about 10 minutes.
  2. Combine wet ingredients: In a bowl, beat eggs and oil together. Add proofed yeast mixture and remaining milk and salt; mix well.
  3. Prepare dough: Gradually add flour to wet ingredients until thick. Knead until smooth and not sticky.
  4. Let rise: Cover the dough with plastic wrap and let it rise in a warm area for about 30 minutes or until doubled in size.
  5. Shape dough: Divide risen dough into five pieces and roll each into thin circles.
  6. Cut triangles: Slice each circle into eight triangles.
  7. Fill and roll: Place feta mixture on each triangle's wide end and roll towards the point.
  8. Bake: Brush with egg yolk, sprinkle sesame seeds, then bake at 350°F (175°C) until golden brown.
